Currants Roll Recipe

Simple Trini recipe to create an ol' favourite. This is what I made on Sunday with the help of my best friend and I must say it tasted pretty good.




This recipe was taken from a colleague of mine's cookbook Sheldon G. Lutchman. Enjoy!

Indredients:

  • 1 cup currants
  • cinnamon powder
  • 2  tsp sugar
  • 2  tbsp melted butter
  • full cream milk ( or coconut milk)

Directions:

  1. Prepare basic pastry dough.
  2. Roll out the dough and spread the butter, sprinkle the cinnamon, spread and press in the currants and sprinkle with some sugar
  3.  Roll one long side of the dough and fold over.
  4. Moisten the edge with a little milk, press together to seal.
  5. Place on a lighlty greased baking sheet or dish.
  6. Heat oven to moderate 350 degrees F.
  7. Bake for 25 minutes or until golden brown.
  8. Cool first and then cut
